Erik Goossens created these diamond shaped chocolates and faceted heart shaped chocolates as a tribute to his home town Antwerp – diamond capital of the world.
Each layer is filled with 4 chocolates each of: diamond shaped white chocolates filled with two layers of bittersweet champagne truffle. Faceted heart shaped milk chocolate filled with a layer of grapefruit paste and a layer of butterscotch truffle. Faceted heart dark chocolate filled with a layer of banana cream and a layer of truffle. “Ruby” milk chocolate filled with a layer of blueberry paste and a ganache (chocolate and cream).
The dark chocolate is a blend of organic cacao beans sourced from Grand Cru terroirs located in Venezuela, Ghana, Tanzania, Cameroon and Sao Tome. The milk chocolate is made from organic cacao beans coming from Java (Indonesia).
